An Easy Lunch


This is a super easy, quick lunch that everyone can enjoy.

What you’ll need:

  • flour tortillas
  • shredded cheese (any variety – I used mozzarella & cheddar)
  • raw leaf spinach
  • hummus (I used roasted red pepper)

To make these I just spread hummus on a tortilla and top it with some cheese and spinach. Then place another tortilla on top and cook it in a pan until the cheese is melted. Once they’re done, slice them into wedges and you’re ready to eat! It’s simple, healthy and delicious!
