Chewy Granola Bars

Our family loves granola bars. The crunchy kind, the chewy kind, even granola by itself. It’s delicious. So when I found this recipe for a no bake chocolate chip chewy granola bar, I knew it would be something easy I could make for us that would be a delicious snack. It’s a four step process that couldn’t be easier. Let me know if your family enjoys them as much as mine.

Chewy Granola Bars

  • 1/4 cup butter
  • 1/4 cup honey
  • 1/3 cup brown sugar
  • 2 cups quick cooking oats
  • 1 cup rice cereal
  • 1/2 tsp vanilla
  • 1/4 cup chocolate chips

In a bowl stir together oats, cereal and chocolate chips. Set aside. In a small saucepan melt butter over medium heat. Then mix in honey and brown sugar. Reduce heat and cook 2 minutes. Pour in vanilla and stir. Pour over dry ingredients and mix well. Pour into a greased baking dish and press down. Sprinkle with a few extra chocolate chips. Let cool for at least 2 hours, then cut into bars and wrap in wax paper. Store in an airtight container. *Tip* Sometimes when you cut the bars a few might crumble a little. No worries, I just pour the crumbled granola into a container and eat it by itself or pour on top of yogurt or cereal.
